This recipe is my own and a family favourite. I tend to whip this up when I am out of ideas for what to cook for dinner. Healthy and nutritious. I also used to cook this for my daughters when they were little for their dose of vegetables. It was and still is a major hit. I am not a measurer or by any means a chef but I will try my best to give accurate measurements.
3 small potatoes
1 cup of peas
1 cup corn
1 cup cheese
1 tablespoon seeded mustard (optional)
1 sheet puff pastry
Chop all vegetables (you can add any vegetables you like) into small cube size pieces. Cook in a little water until tender. Drain. Add egg and mix well, then add cheese and mustard. Mix through well. Add along centre of pastry and roll. Place on oven tray lined with baking paper at 160 degrees until golden brown. Make salad of your choice. Here I have rocket, baby spinach, cucumber, snow peas and cherry tomatoes. Dressing I have a little lemon juice with seeded mustard and a little whole egg mayonnaise. Yum!!
